[Mother’s Day] Best tortang talong

MANILA, Philippines — Maria Plaza, my mom, is the best mom in the world because she prepares the best tortang talong (eggplant omelet) in the entire universe.

She grills the eggplants (instead of steaming or broiling) to bring out their natural flavor before frying them.

Then, she adds a generous amount of scrambled eggs, tomatoes, onions, and other spices.

My mom knows my preferred amount of crispness of the omelet. Whenever I remember the sight and the taste of the slightly burnt sides of the omelet, I just want to take the next flight and go home.

But more than just the mouth-watering tortang talong, the best times with my mom are when she joins me for breakfast and we just talk about our lives (and other people’s lives too!). – Rappler.com
