RAPPLER RECIPES: Roast chicken and pesto sandwich
Got leftover chicken in the fridge? Read on.
- Focaccia bread, sliced in half (alternatively, you can use ciabatta or mini baguette)
- Bottled pesto
- Tomatoes, sliced
- Leftover roast chicken
- Lettuce or other salad greens
1. Toast focaccia in a pan over medium heat until toasty and crunchy; set on a plate or chopping board.
2. Spread pesto on bottom half of the bread; top with tomato slices, leftover chicken, and salad greens before topping with top half of the bread.
