Aside from their best-selling strawberry and matcha pistachio cakes, Baguio City's Tea House Restaurant and Bakeshop also sells an ube brazo cake, where moist ube cake meets fluffy brazo de mercedes.
The cake is now available to Metro Manila customers through food delivery service Love, Strawberry (who also delivers the famous Vizco's strawberry shortcake).
The ube brazo cake features a variety of sweet layers from bottom to top: a graham crust, light ube custard, a moist ube sponge cake, yema custard, the fluffy, torched soft meringue of a good brazo, and dollops of whipped cream and ube custard on top.
Tea House's brazo de ube cake costs P1,097 for the 7x7 cake and P1,197 for the 8x8 cake. The cake can be kept in the refrigerator for up to a week. By the way, they have a mango version of the brazo cake.
